Broccoli and Cheese Sauce 

This may very well be the most delicious way in the whole world to eat broccoli. Ok, that may be a stretch, but its still very, very tasty. Wondering why you're seeing a vegetable smothered in cheese sauce on a healthy eating website? Don't fret! This is a much lighter cheese sauce than most, but still packs a ton of ooey-gooey flavour.

 

Since we are using about half the amount of cheese found in most cheese sauces, the trick is to use a good sharp cheddar. I used a mix of half aged white cheddar and orange cheddar, which worked great.

 

This recipe will yield enough cheese sauce for 4 good servings. I used 1 large head of broccoli, but you may opt to use 2 depending on size.

 

Broccoli and Cheese Sauce

Serves: 4

Calories: 220 per serving

 

Ingredients:

1-2 heads of broccoli

2 tbsp flour

2 tbsp butter

1-1/2 cups low fat milk

3 ounces grated cheddar

pinch of fresh nutmeg

pinch of cayenne

salt and pepper to taste

 

Directions:

  1. Cut your broccoli into bite sized pieced and place them into a steamer.
  2. In a small pot over medium-low heat create a roux by adding the butter and flour. Cook this for about 2-3 minutes.
  3. Add the milk, about 1/4 cup at a time, stirring with a whisk. Adding the milk in small additions will help prevent any lumps in the sauce. Add a pinch of freshly grated nutmeg and a pinch of cayenne pepper. Bring to a boil then reduce the heat to medium-low and simmer for about 10 minutes.
  4. Turn of the heat and add the cheese, stirring slowly until its melted. Season with salt and pepper to taste.
  5. Place the steamed broccoli into a serving dish and pour the cheese sauce over top.
