Healthy Baked Parmesan Fries

If you like potatoes, parmesan, or just food in general, make these. Stop reading this post and skip to the recipe. Seriously, these where some of the best fries I have ever eaten in my entire life. And you know what? They have about half the calories of the the deep fried offerings from some of the big names in fast food. I know, your mind is blown.


All the credit for this gem goes to Nicole. It was her night to cook and as always, she nailed it. These fries are light and fluffy on the inside and super crispy and seasoned on the outside. They take a bit of time in the oven, but its well worth it.


With half the calories of your typical deep-fried french fries, these are a much lighter option. Sweet potatoes could work successfully here as well and provide some extra vitamin C and B6, as well as a hefty punch of vitamin A.

Crispy Oven Baked Parmesan Fries:
Serves: 4
Calories: 180 per serving
 

Ingredients:
1lb russet potatoes
1/4 cup grated Parmesan cheese
2 tbsp olive oil
1/2 tsp Italian herbs
1 tsp chili powder
1/8th tsp cayenne
1/4 tsp garlic powder
salt and pepper to taste


Directions:

  1. Pre-heat the oven to 425 degrees.
  2. Wash the potatoes and cut them into fries, about 1/4 inch thick. Place the potatoes into a large bowl.
  3. In a small bowl combine the Parmesan cheese and all of the spices. Sprinkle the mixture over the fries and toss to coat. Drizzle the 2 tablespoons of olive oil over the fries and toss once more.
  4. Place the fries onto a large aluminum foil lined baking sheet and bake in the pre-heated over for 40 minutes or until crispy and golden.
