10 Minute Spaghetti with Toasted Garlic Tomato Sauce

As promised, I give you the first of many delicious pasta recipes. And to kick off the first post, how does a hearty spaghetti with a toasted garlic tomato sauce, done in under 10 minutes sound?
I was impressed with this little recipe. The sauce is extremely simple to prepare and only contains about 5 or 6 ingredients. The cooking time is brief, at about 6 or 7 minutes, which is conveniently the same amount of time it takes most spaghetti noodles to reach a perfect el dente. I can comfortably say, u can throw this pasta together faster than you can cook up a box of KD.
Now, if you really want to ensure success here, you'll want to use a high quality whole wheat pasta and a high quality tomato product. Canned or fresh San-Marzanos are of course my first suggestion (which shouldn't be a problem because you keep these in the pantry, right?), but any high quality, low sodium canned tomatoes or tomato sauce will work here.
Serve this with a fresh garden salad and you've got a healthy, filling lunch or dinner in under 10 minutes from start to finish.
Spaghetti with Toasted Garlic Tomato Sauce
Serves 2
Calories: 340 per serving
Ingredients:
100 grams dried whole wheat spaghetti
2 tbsp olive oil
2 cloves garlic thinly sliced
1/2 tsp chili paste
1/4 tsp oregano
4-6 fresh basil leaves
1 cup diced tomatoes or 3/4 cup tomato sauce
salt and pepper to taste
Directions:
- Bring a large pot of salted water to a boil. Add the spaghetti and cook until el dente, about 6-7 minutes.
- Pre-heat a sauté pan to medium heat. Add the olive oil and garlic slices. When the garlic slices begin to fry, reduce the heat to medium low. You want the garlic to simmer in the hot for about 5 minutes, or until they turn a nice shade of golden brown. Be careful not burn the garlic, as you will have to start over from scratch. Once the garlic begins to develop a bit of color, about 3 minutes, add the oregano and chili paste. and cook for a further 1 minute. Add the tomatoes/tomato sauce, season with salt, pepper and simmer until needed.
- Once done, drain the spaghetti and add it to the tomato sauce. Turn off the heat and stir in the basi leaves. Let the noodles rest in the sauce for about 2 minutes before serving.
