Brace yourselves.. Delicious, healthy recipes are on their way! After a busy week or so of working and socializing I'm back into the swing of things and ready to start posting some good eats. While I get myself sorted, enjoy these pics of some of last weeks meals!
Roasted Pork Tenderloin with Chunky Apple Pan Sauce:
Sear 1 pork tenderloin. Remove to a roasting pan. Roast at 500 degrees for 10 minutes. Toss some apples, butter, cinnamon, cloves, cider vinegar and honey into the pan you used to sear the pork. Cook this over medium heat until the pork is done. Finish with some fresh herbs.
Teriyaki Chicken Stirfry:
2 Teriyaki marinated chicken breasts cut into strips. Stir friy some peppers, peas, onions, carrots, garlic, ginger and chili. Add the chicken breasts and continue to stir fry. Add some chicken stock, soy sauce, orange juice, cornstarch and a pinch of brown sugar. Allow to thicken. Serve over rice.

Herb Breaded Haddock with Dill Yogurt:
Lightly dust 2 haddock fillets with flour, salt and pepper. Dip haddock into milk then a mixture of whole wheat bread crumbs and parmesan cheese. Pan fry in a few spoonfuls of olive oil until crispy. Set aside. In a small bowl combine some plain Greek yogurt, lemon juice, dill and a pinch of cayenne. Spoon over the haddock.
